Pasta in Pesto Sauce

I made pesto sauce to clean my refrigerator. To make use of Pesto I made pasta for dinner. This fresh tasting dish is as good and filling as it is easy.
The recipe goes like this..  

Ingredients


1/4 cup Pesto
1/4 pound pasta of your choice(I used rotini)
2 tomatoes chopped (If you have time on hand oven roast the tomatoes)
handful of spinach roughly chopped
Salt per taste
1 tsp ground black pepper
1 clove of garlic minced
Dash of lemon(about 1/2 tsp)
1/2 tbsp of Extra virgin olive oil
2 tbsp Parmesan cheese for garnish

Method

Cook pasta according to package directions. While cooking the pasta once the water comes to a boil add a tbsp of salt and give a good stir before dropping in the dry pasta. Let it cook and drain the pasta into the colander.
Just before draining the pasta into a colander, reserve 1/4 cup of pasta water and set aside. Drain the pasta, put back in the empty pot and keep aside.
Once you drop the pasta into boiling water, heat oil in another sauce pan. Add in the garlic and fry for couple of seconds. Add in the chopped tomatoes and let them cook till they have little charred color. Stir in the spinach and let it wilt down.
At this point stir in the Pesto and the reserved pasta water, a little at a time, to create a sauce. Add the ground pepper. Give it a good stir. Check for salt and adjust seasonings.
Drop in the pasta give it a good toss gently to coat with sauce thoroughly. Add in a dash of lemon juice, toss it one last time and turn off the heat. Garnish with Parmesan cheese.

Pulla attu / Sour Dosa

This is one recipe that jogs my childhood memories. People from coastal Andhra especially from village background will for sure be familiar with this Pullattu. Baklava

Baklava is a Middle Eastern specialty. Baklava is made in many shapes I decided to make them in rolls. Instead of honey I used combination of sugar and honey to glaze and flavored with cardamom. Baklava is made using phyllo dough ; it is available in frozen section where you can find puff pastries in supermarkets. I bought Athens Pyhllo dough at Target. Recipe will make 24 pieces Ingredients 12 sheets of phyllo dough 1 1/2 cup clarified butter 1 1/2 cup ground almond 1 1/2 cup ground walnuts 3 tbsp pistachios 3/4 cup coconut powder 1 1/2 teaspoon cardamom 3 1/4 cup of sugar Syrup 1 1/2 cup sugar 1 cup water 1/8 cup honey 2 teaspoon lemon juice About 2 tablespoon sliced pistachios for garnish Note Be sure to thaw the phyllo dough using the instruction from the package, phyllo dough should be at room temperature before using. Do not open the package until you are ready to use. Unused sheets roll them in clear plastic wrap and refrigerate . Fo
