Chilli Chicken

Give me chicken any form - I will eat it...hold on....I will take my words back..Give me  cooked chicken any form and I will eat it.  yeah now I said it right :)..

Of all I like chicken deep fried. Fried chicken coated with spicy sauce is like icing on the cake! Here is one recipe which exactly fits my spicy fried chicken cravings ----- Chilli Chicken it is!!!! mmmm mmmm and a big mmmmm..

The beauty of this recipe is you can get this as much or as less spicy as you want. .Ever since I tasted this dish for the first time, I fell in love with this dish.

Stories apart..Here is the procedure to whip up this dish and I bet you will fall in love with this dish too....

Oil for deep frying +1 tbsp 

For Marinade
2 lbs Chicken
2 tbsp all purpose flour (Maida)
1 tbsp Corn flour
2 Eggs
1 tsp Soy Sauce
2 tbsp Hot Chilli sauce(You can use Sriracha hot sauce)
1 tbsp Vinegar
1/2 tbsp tomato Ketchup
1 tsp Black pepper
1 tsp Garam masala
couple of pinches of orange food color
1 1/2 tbsp ginger garlic paste
Salt and red chilli powder per taste

For Sauce
1 big onion chopped
4 garlic cloves chopped real fine
5 Green Chillies slit length wise(add more if you like it spicy)
1 bell pepper chopped(any color will work)
6 to 10 curry leaves

handful Coriander leaves
2 Green onions chopped

Break the eggs into a small bowl and beat well. Clean the chicken and place it in a large bowl. Add all the marinade ingredients except beaten eggs and mix well. Now add beaten eggs to the chicken mixture and mix well. Cover it and let it marinate for atleast 2 hours.
Heat the oil in a deep bottomed pan. Drop in a small piece of chicken to see if the oil is ready for testing. The same piece of chicken can be used for taste test. Check for salt and spice at this point. Deep fry the marinated chicken pieces. Make sure every chicken piece is well covered in the batter.
Drain the fried chicken pieces on paper towels.

Heat 1 tbsp oil in another pan. Add curry leaves and let them splutter. Then add onions, bell peppers, garlic, chillies and a pinch of salt.

Fry for 5 minutes till onions look translucent. Do not fry the onions till they turn brown. The onions just need to be cooked little bit but retain the crunch..

Now toss in the chicken pieces and mix gently. Turn off the heat and garnish with coriander leaves and green onions.

You can always adjust the spices as per your taste.
I did not use too much of food color. If you want your chilli chicken in bright red just add little bit more of the food color.
You can skip the sauce part and just garnish the fried chicken with raw onions, coriander leaves and green onions. But I like that extra layer of flavor.

Ingredients For Batter 2 cups thick butter milk(majjiga)
2 cups rice
1 tsp methi seeds(menthulu)
salt per taste
For Dosa finely minced green chillies, chopped onions and minced cilantro
Method For Batter Wash the rice. Soak rice and methi seeds in the buttermilk over night. Then in a mixer jar take rice, methi seeds, the buttermilk in which we soaked the rice, salt and grind to a smooth paste. The batter can be little thinner. Now take the batter into a bowl and leave it in a warm place to let it ferment overnight.
Stick it in the refrigerator the next morning.

Apollo Fish

Somehow I do not like eating out very often but I crave for some dishes served at the restaurant. So I try to replicate them in my kitchen modifying the recipe my way to exactly match my taste buds.

The recipe I am posting today is one such dish. This was the first restaurant dish I fell in love with eight years back..The name itself will make my mouth water..ummmmm..
