Simple Chicken Kebabs

Hubby dear wanted to eat kebabs and I am feeling little lazy that day... so kind of went ahead and made this version of kebabs with very few ingredients and to my surprise they turned out pretty tasty... I just used regular ingredients we use in Indian meat dishes and at times simple and easy is definitely better :)

Ingredients


250 grams boneless Chicken
Cooking oil as required
3 to 4 skewers depending on length of the skewer(If using wooden skewers, soak in water before hand for 3o minutes)

For Marination

3 tbsp thick yogurt(preferably greek yogurt)
1 to 1 1/2 tsp red chilli powder(adjust depending on the spice level)
1 tbsp ginger garlic paste(adjust per spice level)
1 tsp garam masala
Salt per taste
1 tbsp lemon juice

Method

Clean and wash the chicken properly. Cut it into thin strips . Keep it aside.
Next, add the marination ingredients in the chicken and mix it properly. Keep it in the fridge for about an hour.
Preheat the oven to 400F.
Take the marinated chicken, add in oil and mix well. Now put them onto skewers. Take a baking tray and arrange the skewers on the baking tray so that the drippings will fall into the tray.
Spray with cooking spray and put the chicken in the oven. Let the chicken bake for 20 to 30 minutes. Turn the chicken half way. 
Turn the oven to broil and let the chicken cook for another 4 minutes each side.
Serve hot with sliced onion and mint chutney.

Pulla attu / Sour Dosa

This is one recipe that jogs my childhood memories. People from coastal Andhra especially from village background will for sure be familiar with this Pullattu. There are lot of versions of how to make this tasty dosa. I almost forgot about this item until one of our friend's mom made this for us for breakfast recently. Baklava

Baklava is a Middle Eastern specialty. Baklava is made in many shapes I decided to make them in rolls. Instead of honey I used combination of sugar and honey to glaze and flavored with cardamom. Baklava is made using phyllo dough ; it is available in frozen section where you can find puff pastries in supermarkets. I bought Athens Pyhllo dough at Target. Recipe will make 24 pieces Ingredients 12 sheets of phyllo dough 1 1/2 cup clarified butter 1 1/2 cup ground almond 1 1/2 cup ground walnuts 3 tbsp pistachios 3/4 cup coconut powder 1 1/2 teaspoon cardamom 3 1/4 cup of sugar Syrup 1 1/2 cup sugar 1 cup water 1/8 cup honey 2 teaspoon lemon juice About 2 tablespoon sliced pistachios for garnish Note Be sure to thaw the phyllo dough using the instruction from the package, phyllo dough should be at room temperature before using.
